Pam Knight’s Guiltless Chocolates
These melt-in-your-mouth chocolates are a sweet sensation - without any added sugar! Check the links for suggestions on finding a few of the key ingredients, and be sure to have your silicone cups ready and a clear space in your freezer before you begin.
Ingredients
- ¼ Cup Cacao butter (weigh out 4 oz)
- ½ Cup Coconut milk
- ¼ Cup Coconut syrup (Wilderness Family Naturals)
- 1/3 Cup + 2 Tblsps Cacao powder
- 1 Tblsp vanilla extract
- ½ tsp Himalayan salt
- 5 drops Butterscotch flavoring (Medicine Flower)
- 2 drops vanilla flavoring (Medicine Flower)
- 1 ¼ Cup chopped nuts (cold)
Instructions
- In a small pan, gently melt butter with milk over low heat.
- Turn off heat, add syrup and whisk together.
- Mix all other ingredients - except nuts - together in medium sized bowl.
- Add heated butter mixture to the bowl and whisk until incorporated.
- Add nuts and mix until incorporated and the mixture thickens.
- Spoon into silicone cups and freeze.
