Pea Cakes
This versatile recipe comes from our friends at Apple A Day Co-op. Much like cornbread, the cakes can be eaten plain for a nice complement to your meal. If you're feeling adventurous, try pouring salsa on top for a snack, or add cinnamon and honey for a sweet treat!
Ingredients
- 1 cup of organic yellow split peas
- 3 Tablespoons of sushi rice
Instructions
- Soak peas and rice together in a bowl of filtered water for about 4 hours.
- Drain, rinse, and place in a high speed blender with ½ cup of filtered water. The batter should be somewhat thick. Add more water until the desired consistency is reached.
- Spoon onto a very hot non-stick skillet, and cook it like you would a pancake.
