Angel Eggs
Yes, you can lighten up your deviled eggs without sacrificing the fun! Try making this recipe at least twice - once with vegenaise and once with coconut oil mayo - and tell us which version is your favorite. Thanks to Apple A Day Co-op for sharing this idea with us!
Ingredients
- 1 dozen organic eggs
- 4 Tblsp vegenaise or coconut oil mayo
- 1 tsp apple cider vinegar
- 2 tsp Dijon mustard
- ½ tsp sea salt
- 1 tsp white pepper
- ¼ tsp chipotle powder
- 2 Tblsp capers
Instructions
- Boil eggs for 10 minutes.
- Cool, peel, and cut eggs in half lengthwise.
- Combine egg yolks with all ingredients except mayo.
- Add mayo one tablespoon at a time until you reach the desired consistency.
- Stuff each egg white half with the yolk mixture, either by spooning or piping it in.
